Got leftover ham? This Southern Ham Cornbread is a slice of cornbread sent from heaven. It uses up leftover ham in a very delicious way. The ingredients are probably already in your refrigerator or on your pantry shelf, so you can probably make it tonight. It goes well with soups, salads or beans, and although it is technically a bread, it is almost a meal. ””

This cornbread can be made even quicker if you substitute dehydrated red and green peppers, as well as dehydrated onions to eliminate the time it takes to chop the vegetables. Just use half of what the recipe calls for. If you don’t have or can’t find self-rising cornmeal, you can easily make your own: combine 3/4 cup cornmeal (I use white cornmeal, but yellow will work, too), 3 tablespoon flour, 1 tablespoon baking powder, and 1/2 teaspoon salt.

Not only is this cornbread a good choice for dinner, it is a good dish for brunch, served with fruit and egg dishes. Make sure you have real butter to slather on, since the texture is like a slice of moist cornbread.

12 Servings

1/2 cup green bell peppers, cut into small dice
1/2 cup red bell peppers, cut into small dice
1/2 cup green onions, finely chopped
6 tablespoons melted butter
3 eggs
1 15 oz. can cream style corn
1 15 oz. can corn, drained and rinsed
1 1/2 cups self-rising cornmeal
1 1/8 cups buttermilk

3 to 4 cups diced ham

1 1/2 cups shredded cheddar cheese

  1. Preheat oven to 350°.
  2. Spray a 9" x 13" shallow baking dish with non-stick spray.
  3. Mix the red and green bell peppers, onions, butter, eggs, corn, cornmeal, and buttermilk; stir just until combined and fold in the ham.
  4. Spread the mixture into the prepared baking dish.
  5. Bake 35 minutes.
  6. Remove from the oven and sprinkle with the cheese.
  7. Bake an additional 15-20 minutes or until set in the middle.
  8. Let sit 10 minutes before cutting into squares.
